Ingredients

  • 2 tbsp Roasted Almonds
  • 3 tbsp Hazelnuts (or pistachios)
  • 2 tbsp Sunflower Seeds
  • 3 tbsp Sesame Seeds (white, black or mix)
  • 1 tsp Fennel Seeds
  • 3 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 1 tsp Sumac
  • 1 tbsp Paprika
  • Pink Salt & Pepper (to taste)

Instructions

  • Gently pan fry almonds, sunflower seeds and hazelnuts for about 2-3 minutes. Alternatively, these can be baked in a preheated oven for 3-4 minutes.
  • Remove and add to blender.  Turn on and stop when they are broken into small pieces before going into a powder.
  • Next, add all other ingredients into the pan and slowly cook for approx 2 minutes.
  • Remove from pan and add into the blender on top of the first ingredients. Gently pulse to mix through being careful NOT to blend into a powder. Dukkah should have a nice crunch.
