Organic Village Japanese Bowl with Miso Glazed Vegetables & Soba Noodles

Ingredients

  • 1 packet Soba Noodles (easily substituted for Black or Wild Rice based on your preference)
  • 3 tbsp Rice Vinegar
  • 1 tbsp Tamari
  • 1 tbsp Sesame Oil
  • 1/2 tbsp Olive Oil
  • 1 Lime (juice)
  • 1 Fresh Ginger
  • 2 tbsp Mirin
  • 1 packet Shiitake Mushrooms
  • 1 bunch Broccolini
  • 300 grams Organic Village Black Bean & Rice Tempeh
  • 1 Jar Cucumber Pickles
  • 1 tsp Wasabi
  • 1 packet Nori Seaweed
  • 1 packet Fresh Enoki Mushroom
  • 1 tbsp Miso Paste

Instructions

  • Rehydrate shiitake mushrooms in hot water in a covered bowl for 20 minutes. Refresh noodles in hot water. Strain and toss with 3 Tbsp rice wine vinegar, 1 Tbsp sesame oil and 1 Tbsp tamari. Add the mushrooms and leave to marinate while you prepare the rest.
  • Pan fry broccolini and sliced black bean & black rice tempeh in olive oil (take it easy, remember 130 calories per 1 tablespoon of olive oil) and 1 tablespoon miso, 1 teaspoon tamari, the juice of 1 lime, 1 tablespoon grated ginger, 1 tablespoon sesame oil and 2 tablespoons mirin.
  • Serve with cucumber pickles, wasabi, nori seaweed and fresh enoki mushroom.

Notes

Training hard or just super hungry and wanting to bulk up the macros in this meal a little more? Add in some edamame beans - works perfectly with the existing flavour combinations.
