Organic Village Japanese Bowl with Miso Glazed Vegetables & Soba Noodles

Ingredients
1packetSoba Noodles(easily substituted for Black or Wild Rice based on your preference)
3tbspRice Vinegar
1tbspTamari
1tbspSesame Oil
1/2tbspOlive Oil
1Lime (juice)
1Fresh Ginger
2tbspMirin
1packetShiitake Mushrooms
1bunchBroccolini
300gramsOrganic Village Black Bean & Rice Tempeh
1JarCucumber Pickles
1tspWasabi
1packetNori Seaweed
1packetFresh Enoki Mushroom
1tbspMiso Paste
Instructions
Rehydrate shiitake mushrooms in hot water in a covered bowl for 20 minutes. Refresh noodles in hot water. Strain and toss with 3 Tbsp rice wine vinegar, 1 Tbsp sesame oil and 1 Tbsp tamari. Add the mushrooms and leave to marinate while you prepare the rest.
Pan fry broccolini and sliced black bean & black rice tempeh in olive oil (take it easy, remember 130 calories per 1 tablespoon of olive oil) and 1 tablespoon miso, 1 teaspoon tamari, the juice of 1 lime, 1 tablespoon grated ginger, 1 tablespoon sesame oil and 2 tablespoons mirin.
Serve with cucumber pickles, wasabi, nori seaweed and fresh enoki mushroom.
Notes
Training hard or just super hungry and wanting to bulk up the macros in this meal a little more? Add in some edamame beans - works perfectly with the existing flavour combinations.
