Ingredients

  • 2 1/2 cups Finely Grated Zucchini
  • 1/4 cup Finely Chopped Dill
  • 1/4 cup finely Chopped Coriander
  • 1/2 cup Sprouted Mung Beans
  • 1/3 cup Chopped Spring Onions
  • 1 1/2 cups Chickpea Flour
  • 2 tbsp Chia Seeds Soaked in 4 Tbsp Water
  • 2 tsp Bobs Red Mill Gluten Free Baking Powder
  • 1/2 cup Filtered Water
  • 2 tbsp Coconut Oil
  • 1 Zest Lime
  • 1 pinch Salt & Pepper (more to taste as needed)

Instructions

  • Finely grate zucchini in food processor then squeeze out excess liquid.
  • Add all ingredients, mix well then let sit in fridge for min 1hr to let batter fluff.
  • Can leave overnight to improve fritter texture upon pan frying the next day.
